In order to be able to take ergonomic aspects into account when planning the kitchen, you should clarify a question in advance: Who is most often in the kitchen? Because the height of the worktop and the accessibility of the wall cabinets should be adjusted to the height of the person who spends most of his time snipping, cooking, washing up or baking.

The right working height in the kitchen

Most manufacturers specify a range between 86 and 92 centimeters as the standard height of the kitchen worktop, although this can still be varied during kitchen planning. You can calculate the ideal height of the respective areas by standing up straight, measuring from the floor to your angled elbow and subtracting 15 centimeters. Or using this table:

Nowadays it is easily possible to optimize each function center - i.e. cooking, preparing, rinsing, storing - individually for the size of the main worker. In this case, there are higher installation dimensions for the sink than for the preparation area or the cooking modules. If you want to plan your kitchen optimally, set the cooktop another five centimeters lower than the worktop - so you can stir in the pot without getting tense in the neck or shoulder. This is usually possible without any problems, since the base heights of the individual elements can be varied. Ask your kitchen consultant about the best solution for your needs.

Kitchen planning in zones

A practical arrangement of the work surfaces and devices makes everyday work much easier. Plan five different zones: storage, storage, rinsing, preparing, cooking / baking. Arrange the zones clockwise for right-handed people and the other way around for left-handed people.

The furniture then follows the usual workflow: Start with a working and storage area at least 30 centimeters wide, next to which the stove or hob is placed. Set up a 60 cm wide work surface on the other side of the stove - 90 cm is even better. Now install the sink and dishwasher. To put clean dishes, you need another 120 centimeters.

Tip: As a right-hander, you usually wash with the right hand and place the dishes on the left next to you - the dish rack should be there accordingly. The dishwasher is in good hands under this - so no space is wasted and the distances are short, for example if you pre-wash pots by hand and then put them in the dishwasher.

When planning your kitchen, you should also consider whether you can install electrical appliances such as a microwave, oven and steamer at eye level and within easy reach - this is easy on the back. Finally, plan the refrigerator and the placement of upper and lower cabinets. Even if a modern refrigerator is thickly insulated, you should place it at a sufficient distance from the stove and the sunny window, otherwise the electricity costs can skyrocket.

Keep the correct distances

A minimum distance of 50 centimeters is necessary between the base cabinet and tall cabinet, 65 centimeters is better. Electric cookers need 65 centimeters to the lower edge of the extractor hood, gas stoves 90 centimeters of air because of the flame.

A household with four people needs about seven meters of space for kitchen cupboards. There should also be a corridor with a width of at least 1.20 meters between two rows of kitchen furniture so that an open cupboard door does not become an obstacle and you can bend down comfortably. If you have less space available, you have to expect restrictions.

You can get by with less space if you compensate for tightness by height. Extra high top and tall cabinets hold more than usual sizes. 35 cm deep shelves and top cabinets fit into the niche between the base and wall unit. Do not place a tall cabinet next to the window if it is partially covered - otherwise it will mutate to a light brake. The standard depth of kitchen cabinets and appliances is 60 centimeters.

Optimally plan storage space in the kitchen

Experience has shown that every kitchen has too little storage space - no matter how big it is. In case of doubt, you should therefore plan to add a few more cupboards because they are guaranteed not to remain empty. In addition, it is very annoying in the long run to always have to put several bowls and kitchen appliances aside before you can get the necessary utensils. Tip: If possible, use the upper, hard-to-reach compartments of the wall cabinets only for kitchen appliances or dishes that you rarely need.

You should have a good view of the interior of the cupboard and be able to clear it in and out with a comfortable posture. Therefore, base cabinets with shelves are not cheap from an ergonomic point of view. Variable extracts, especially modern full extracts, are recommended because they offer a very good overview and optimal access. In tall units, shelves block both the view and the gripping options. According to the recommendations of the AMK ergonomics study, only accessible baskets or shelves, such as those found in a smooth-running “pharmacy cabinet”, offer optimal accessibility. Important: Fully extendable tall units must be firmly anchored to the wall so that they do not tip over when opened!

Deficiency list of the old kitchen helps with planning

It's not just a wish list that makes sense when planning your kitchen. The critical analysis of the old kitchen also helps to identify defects and errors and to avoid them in the new kitchen. For example, keep a close eye on your work habits for a few days.

  • Are you annoyed by the long distances between the refrigerator and the main workplace?
  • Are the ingredients and the dishes for breakfast to be collected every morning from several cupboards that are not directly next to each other?
  • Are pots, plates and pans placed unfavorably and are difficult to reach?

Go so far with the error analysis that you also assess the height of the worktop and the kitchen lighting. You should definitely keep the list of shortcomings and measure the new kitchen against them.

Adapt kitchen wishes to reality

Also ask yourself how much time you will be spending in the kitchen. If you only cook occasionally and prefer to quickly defrost a frozen meal, you do not need the same equipment as a hobby cook who likes to cook and refined and sometimes hosts a dozen guests. The number of seats and work surfaces, but also the size of the pantry, depends on these needs. The terms "work kitchen", "dining kitchen" and "living room kitchen" serve as a rough classification of the intensity of use.

The wishes for a new kitchen are often larger than the available space. To ensure that everything important can be accommodated in this room, kitchens are usually furnished to the last centimeter. The installation of tailor-made kitchens is fitted with a minimum of scope - nothing can be moved afterwards.

How to measure the kitchen correctly

The responsibility for the correct measurements usually lies with the kitchen consultant, who measures the kitchen with a folding rule or laser measuring device. However, you must accept the measurements on a furniture order form as correct. Precise measurement is therefore all the more important. So you better measure again and don't overlook a ledge. Do not forget to measure the width of the door openings and door frames.

In an old building with sloping walls and corners that can never be completely rectangular, you should note the following: Compare the dimensions of opposite walls. Differences of up to two centimeters are irrelevant. If the difference is larger, a corner of the room is not rectangular - you must measure these angles! Are the walls vertical? Otherwise, determine the clear dimension at 90 and 150 centimeters between two walls. Also check the ceiling height for each wall at at least three points and note the highest and lowest. Then transfer the dimensions to a scale drawing. The 1:20 scale is best suited for this. That means one meter in reality corresponds to five centimeters in the sketch. It usually fits comfortably on a sheet of writing paper. When measuring a building shell, note how thick the plaster, the tiles and the floor will be. Please also state the materials of the walls - lightweight walls are not stable enough for wall cabinets. Here you may have to integrate suitable stiffening rails or wooden beams when building the walls at the correct cabinet height.

Don't forget important details when planning your kitchen

Sockets and water connections, the size of the window as well as the height and width of the window sill and the dimensions of various radiators are also shown in the drawing. All details with the dimensions are noted in the wall views. Once you have created these documents, you should immediately make enough photocopies. Because now you have excellent sketch templates and can already draw imaginable kitchen furnishing ideas. In the floor plan you will soon see which type of kitchen is suitable and how you can use the space optimally. You can also see on the wall views whether and how you are installing tall cabinets and the kitchen sink, arranging the refrigerator correctly and where the tile mirror may need to be attached.

There are different types of kitchens, each adapted to different circumstances.

The one-line kitchen

This type of kitchen is ideal for long, narrow rooms. Because here everything is set up on a single wall. The minimum width for a kitchen with breakfast area is approximately 1.80 meters. A disadvantage of this type of kitchen is the small storage space. In addition, narrow rooms look even more hose-like if a single-line kitchen is installed on a longitudinal wall. Therefore, it is mostly a temporary solution for confined spaces.

A single-cell kitchen can be found especially where there is little space. In addition, it is usually the kitchen form of choice for small one-room apartments.

The two-line kitchen

The two-line kitchen offers more storage space and work space. However, due to the cabinet depths of 60 centimeters and the distance between the rows of furniture, it requires a total of 2.40 meters in width. Whether this kitchen planning makes sense often depends on how and where windows and doors are installed. If you place functional furniture such as a refrigerator, stove or dishwasher next to each other on a wall, you save on cables and pipes and benefit from short distances. Place the storage furniture on the opposite wall. With this type of kitchen, however, keep in mind that the workflow is often interrupted by the two separate kitchen lines.

The L-shaped kitchen

The L-shape is particularly suitable for kitchens with an unfavorable window or door position as well as for narrow rooms. It fits well in a kitchen because it offers space for a table in the corner opposite the "kink" in the furniture row. A free-standing kitchen island needs 20 square meters of kitchen space as well as electrical and water connections in the middle of the room. An island with one side on the wall is less expensive, then even 10 square meters are sufficient.

Stove and sink are no longer installed in the same row of cupboards. Ideally, you should plan a rotatable rondel for the corner - this is a little more expensive, but does not waste space and is equally spacious and ergonomic with pull-out rotating elements - ideal for pots and other larger kitchen utensils. You can also use the corner to gain additional storage space on the worktop, for example for the fully automatic coffee machine. Calculate that all ways of cooking become longer as soon as you include the dining table as a work surface when cooking.

The U-shaped kitchen

The U-shaped kitchen is a solution for rooms with a lot of space. It enables fluent processes and you have a large area that can be used for working and parking. However, do not install too many tall units, it will quickly become overloaded. Also note that all three sides are used here and it is therefore difficult to integrate a dining area.

The G-shaped kitchen

The G-shape arises from furniture with a block that projects freely into the room. This can serve as a cooking area or as a small dining area with space-saving bar stools. Make sure to set up important workplaces as centrally and close to each other, otherwise the distances are often too far.
